Default Quick meals that dont take much time?

See I pretty much have no time to prepare anything. I usually get up and go to work, and then go straight to the hospital where my dad is dnr with advanced melanoma. I stay there until night and I come home and go to sleep and repeat. I wanna get my diet going again but its hard. My dad has always wanted to see me get big and I wanna try and do it a little before he goes. I dont really have the right equipment to work out but I want to at least consume at least 2800 calories a day. Any advice?
